A very important health key according to the Cayce Readings was diet. While there are many factors affecting health diet ranks high on the list and in many cases can produce dramatic change. The readings stated the ideal health with respect to diet would come from a slightly alkaline blood pH. Acid substances are typically sour in taste, neutralize alkaline chemicals and measure less than 7.0 on a pH scale. Additionally, the readings state that infectious agents (virus and bacteria) simply can't survive or grow in an alkaline blood stream. In short, processed foods, meats and most preserved foods push the blood stream acid while most vegetables and fruits cause an alkaline pH. You can test your own pH with a paper tape sold in most health food stores such as the Hydrion Vivid. 
The process is simple just tear off a small piece and put it under your tongue for a few seconds then remove and check the color. Matching your tape color to the color on the chart will tell you your pH.
Below I am listing many common food items listed according to the readings as how they effect your pH. Please note some items are acidic because of an alkaline reaction in the body and some alkaline items will cause an acid pH in the body for the same reason.

The following foods should be eaten alone not with other foods: Grapefruit, Kumquats, Lemons, Limes, Oranges & Tangerines.
Alkaline dairy: Acidophilus Milk, Buttermilk, Yogurt & Milk (raw only-cow or goat)
Acid dairy: Butter, Cheese, Cottage Cheese, Cream, Custards, Margarine & Milk (processed-boiled, cooked, dried or canned)
Alkaline grains: Amaranth & Quinoa (Buckwheat & Millet are thought to be neutral to alkaline)
Acid grains: all other grain products
Alkaline nuts: Almonds, Chestnuts (roasted) & Coconut (fresh)
Acid nuts: all other nuts plus dried Coconut
Acid meats: all plus gelatin
Alkaline drinks; Coffee substitute & teas
Acid drinks: Alcoholic drinks, Cocoa, Coffee & Indian Teas
